Smores Ice Cream Sandwiches

When I think of summer, I think of two desserts….ice cream and smores!  There is nothing better than an ewwy gooey marshmallow treat when you are camping, or a big drippy ice cream cone on a hot day.  So I thought….why not put them together!? 

Smores Ice Cream Sandwiches

OMGoodness!  This little sweet treat is the perfect combo of cool frozen yogurt and sweet marshmallow gooeyness!  They are super quick to put together and they wrap up nicely to have a week’s worth of treats just for you if you want.

Ingredients:

  • Low Fat Graham Crackers
  • Mini Semi-sweet chocolate chips
  • Marshmallow Fluff
  • Vanilla Frozen Yogurt

First lay out your graham crackers.  Break each large graham in half (a 2 piece) and put them in pairs.

Spread about 1 teaspoon of marshmallow fluff onto each half of graham cracker.  Be careful, this stuff is super sticky!

Sprinkle one one teaspoon of mini chocolate chips on each half….don’t worry…they will stick!

Now spread about 2 teaspoons of vanilla frozen yogurt on half of your halves (the other half are the tops!).  Press down lightly and use the back of a butter knife to scrape off any excess.

Place the frozen treats in the freezer for a few hours to firm up.  Once they are good and frozen, wrap each sandwich individually in plastic wrap and store in a Ziploc bag in the freezer.  And most importantly – ENJOY!

Makes as many servings as you want @ 4 Weight Watchers Points+ Value per serving.
