Jello Yogurt Bites

Here is a fun little snack that everyone in the family will love…I mean just take a peek at these ingredients…

Yep – super yummy and super easy!!  Mix 3 (6 oz each) strawberry yogurts and one .3 oz Sugar Free JELL-O Strawberry gelatin into a large microwaveable bowl.  Microwave on high for 2 minutes, stir.  Microwave 2 to 3 more minutes or until gelatin is completely dissolved, stirring after each minute.  Spoon into 16 paper-lined mini muffin pan cups.

Refrigerate 1 hour or until firm.  Remove from liners and top with half a strawberry.  Its the perfect combo of jello and creamy yogurt!  And it tastes like a sweet dessert treat! The kids will definitely LOVE this one!  ENJOY!!

A Better Sweet Treat

What kind of sweet tempts your sweet tooth the most?  Are you the chocolate-chocolate lover, the sour candy pucker face, or the fruity-chewy combo kind of sweets eater?  I am not picky…I love them all, but I will say that a good fruity sweet is probably my favorite.  When I am trying to make healthier choices, but that sweet tooth is really nagging me, I turn to this quick little trick.

Grab a pound (or two) of grapes – red or green – whatever suits your fancy.  While you are there, hop on over to the jello isle and grab a 3 oz box of sugar free gelatin – again, whatever flavor suits your fancy. (Tip: One 3 oz box of gelatin will cover 1.5 – 2 lbs of grapes!  A little goes a long way!)

Poor the dry gelatin onto a plate, rinse your grapes and SHAKE dry.  The grapes still need to be slightly moist so don’t pat dry or leave them out to dry too long.  Pluck those grapes, toss them into the gelatin, and give the plate a little shake, shake, shake!  The grapes will roll around and get coated with the gelatin.  Put them in the fridge for 30 minutes or so, then take them out, and pop those little sweeties into your mouth!

Today’s combo at my house was red grapes with strawberry sugar free jello (just because I had some jello left over from another recipe), but the best part of this treat is trying out different combinations!  My absolute favorite combo is green grapes + green jolly rancher jello!  They taste like sour patch kids!!  Speaking of kids, this is a treat they LOVE and can even make themselves!

Stop the Train!

I must give my sweet mother a shout out – Thank you momma for passing down your extra large sweet tooth to me!  Of course my mother is just the cutest most precious thing in the world, and has a lot more self-control than I do, so her sweet tooth doesn’t have quite as much control over her as mine does over me. 

With that being said, I am always on the hunt for the healthiest version of my favorite sweet treats.  This way I can still indulge without so much guilt. 

Give me chocolate and I am happy, give me fruity and I am ELATED!  I absolutely love anything sweet and fruity!  So this little diddy is more than perfect for me!  It is chilled, super sweet, filling, and fruity!  So stop the train right there because I have found my new love in life!

Orange Creamsicle Cake

   1 box white cake mix

   6 oz plain greek yogurt

   1 Tbsp orange zest

   1 cup orange juice

   1 cup cool whip free (store brand is ok)  

Mix all the ingredients with a mixer and pour into a greased 8×8 square pan.

I know – so easy right!!??  Bake at 350 for 30 – 35 minutes or until toothpick comes out clean.  Top with 1 cup of Cool Whip Free and slice into 12 pieces.  Store, covered, in the fridge – don’t worry it won’t stay there long Smile.

Pecan Pie Cobbler…WHAT!?

Yes, it’s true….Pecan Pie Cobbler does exist!  It is all the yummy gooeyness from the pecan pie, and the sweet breadiness from a cobbler combined into one perfectly warm, sweet dessert.  Top with a scoop of vanilla ice cream and you are swept right into Heaven!

I found this super simple recipe on…yes, you guessed it…Pinterest.  I gave it a try, and I am soooo glad I did.

A Twist on a Favorite

Do you remember this yummy recipe I shared with you for Banana Pudding Poke Cake?  Yummo right!?  Well I wanted to make cupcakes for our 4th of July gathering (because people are more likely to grab a cupcake than cut a piece of cake) and I also really wanted to share the banana poke cake….

Yep – I make banana pudding poke cupcakes!  I followed the same recipe, the only difference was that I put the whipped cream in a piping bag to make the cupcakes pretty. Smile  They were just as yummy as the cake, and were eaten up right away!

I am going to step away from healthy desserts for a minute to share with you my absolute FAVORITE new recipe!  I was spending time on Pinterest (I rarely do that…haha) when I came across a post for Banana Pudding Poke Cake.  Banana pudding is one of my favorite desserts, and this recipe didn’t call for actual bananas in the cake (which Hubs doesn’t like), so why not try it out?

Banana Pudding Poke Cake

It was so easy to make, and the taste was spectacular!  I have made it three times now (once to try, once to take to an event, and once for an event at our home) and my momma has made it once herself (for a church brunch).  My momma said everyone at her church liked it so much, and it was gone so quickly, that she didn’t even get to try a piece!  Everyone that I have shared it with has fallen in love with it!  I hope you try it out yourself!

Of course I want you to follow the link for the original recipe, but let me give you a quick run down of how this is made so you can see how SUPER EASY it really is to make!

Step One – Bake a box of yellow cake in a 9 x 13 pan according to the box directions.

Step Two – Use the base of a wooden spoon to poke holes all over the cake as soon as it comes out of the oven.

Step Three – Mix up two packages of banana pudding.  Let sit for a minute until slightly thickened.  Spread over your cake and press down into the holes with the  back of a spoon. Put in the fridge to thicken up.

Step Four – Cover the cake with one container of Cool Whip and top with crushed Vanilla Wafers.

Yep – that’s it!!  It is so delicious fresh, but even better after it has sat in the fridge over night.  It is great to take to pot luck events, or good to make a batch just for the family to enjoy!

A Healthy Chocolate Cookie…I’m not joking!

I was spending a little way too much time on Pinterest the other day, when I came across this pin:

Don’t those cookies just look decadent?  I am a sucker when it comes to chocolate fudgy cookies….black beans….I like them too, but I wasn’t so sure about having them in my cookies.  Oh well, its summer…why not give it a try right?

So….the verdict is….OMG!  DELICIOUS!!!  They were so easy to make and turned out so fudgy and sweet!  I even took a batch over to a friends house and everyone liked them (even her kiddos!).  Kid-approved, chocolate, fudgy, somewhat healthy cookies!?  I am keeping this recipe!
